Since I am traveling this week I thought I would do a post to share what I cooked last week. If you follow me on Facebook you have probably already seen these recipes. I found them on Pinterest which is a favorite place of mine. Here is my page!
I did start my portion control eating last week. I find it hard to remember to eat often during the day but I did a pretty good job at it. One thing for sure is that I did eat the portion sizes and was completely satisfied, not desiring more to eat.
We absolutely loved this dinner. Mark said that I have to make this for company someday. I will definitely make it again.
This was very good. You can eat this with tortilla's or over rice. We ate this over shredded cabbage and loved it! We will be making this again. Funny note here, I had gone down the page and printed the recipe out but never went further down the page.
The recipe called for diced tomatoes with green chilies. That is Rotel....duh! I didn't even realize that she posted a picture of the ingredients after the recipe. I used a can of diced tomatoes and a small can of green chilies. I do believe the Rotel would have added some extra spice to this.
For some reason this recipe intrigued me, I just had to try it. It was actually very good and I used some brown rice to thicken it because I like a thick soup. Topped with a little bit of cheese and sour cream. Definitely will make this again.
I may have already shared this with you but I made it again for Mark to try. I made it twice while he was in the UK. It is so tasty and full of flavor. Definitely a new favorite of mine.
I haven't had a lot of energy to do house cleaning, only the light stuff and I had become rather board over the summer with things that I normally enjoy doing being at home. Anyway I decided to spend more time recently in the kitchen cooking. I like this new interest of mine.
I have never ever in my whole life been a person who picks out recipes, makes the grocery list for the week and cooks them. I have always gone to the store and just bought things we needed. When it came to eating, unless company was coming over or major holiday's, I just kinda put a meal together from what we had.
I had told myself recently that when Mark retires I want to plan our meals for the week then shop with that list. I thought it would be a great way to keep us on a budget and make dinner time something to look forward to. I think this plan is going to work out great in the future!

i would love all of these, they look really good. now i need to find a housekeeper/cook to make them for me. it is really good to make the list per your meal planning, i tried it several times but did not stick to it. saves money and is so much healthier.

The Chicken Lombardy has my 'spit spouting', Debby! Hubby and I've both been eating lots of chicken dishes, so it's good to throw a variation into the recipe cycle!
I have never once in my life attempted to make a soup. I really am piqued by the tortilla soup with brown rice though. I may have to try that.
All of those recipes look great Debby! I think it is a great idea to plan a week ahead for dinner (I've been doing it for a few years) and to get the shopping done for it at one time. It really does run smoother to do it that way for me :)
