GIVING MYSELF A PAT ON THE BACK!

I amaze myself when I actually get motivated to cook. My family can thank blogging and Pinterest for the inspiration. Adam came over on Saturday for a visit. (Tristen was in Miami at a conference) We have been talking about how long it has been since I made a meatloaf so that was the plan for Saturday. I also had the new recipe for the potatoes and decided to make the asparagus I made a few weeks ago. I also made the Creamy Berry Goodness that I seem to make almost weekly! 

These can be found on my Pinterest board called Things I have made - check! Below are the direct links. I have been making this meat loaf for as long as I can remember so it is our family favorite. I almost didn't pin the potato recipe because it's one of those annoying long ones. Why do people make those? Yes they bug me!!! Also when I make the Creamy Berry Goodness I make heavy whipped cream and use two small Fage' Greek plain yogurts. I use about 2 cups of frozen mixed berries from Costco.

My Fannie Farmer Cookbook is from 1979. It has always been my staple cookbook that I turn to for help. To this very day I still look up the timetable for cooking turkey every Thanksgiving!

As I mentioned in another post this was my first time making Corned Beef and Cabbage. I decided to make a Martha Stewart recipe I found. I also made some Irish Soda Bread for the first time. (I added caraway to this recipe) This meal was so good and I'm sure I will make it again next year. I also want to thank a woman at Trader Joe's for helping me with the selection of purchasing a corned beef. I was clueless!

Mark and I will be alone for Easter. I'm trying to convince
him that we should go out for dinner. Doesn't that sound like fun?

I don't know why I haven't done this before but maybe because we always buy Romaine and I never gave it a thought. Mark has decided to eat some regular bib lettuce. It does remain fresher longer but doesn't have the vitamins like Romaine :(  Anyway I had a light bulb moment and decided to make myself some wraps. Doing low carb we normally do not have any bread in the house so I will roll turkey breast and eat cheese slices for lunch. It's been such a thrill to have these wraps.....so crisp and crunchy!

I am stilly trying to get to grips with Norwegian food. Had an absolute no-no last night (ready meal) with too much pasta and not enough fish. Your meal looks great though. Very tempting.

I ran across that potato recipe that you posted on Pinterest and I pinned it to one of my boards. I will be giving it a try very soon. Oh, I love lettuce wraps just about any way they come...what a great idea you shared! Have a terrific weekend, Debby!

I'm going to check out the berry recipe. I like wraps too and will often eat that for lunch. I love bread, but not so much in sandwich form. (Fresh from the oven with melty butter is another story!). Have a nice weekend!

Wow! Very impressive!!! Everything looks so wonderful. Irish Soda Bread is really easy to make; and yet the only time I make it is for St. Patty's Day! {{standing ovation}}!!!

Your meatloaf meal looks amazing. I was just in the mood for meatloaf this week too and we had it on Monday. :-)

Your Corned Beef looks beautiful! Ours was fatty and ugly, but delicious! ;-)

I've made wraps with lettuce before too! They are a perfect way to have your sandwich still without the bread :-)

Those potatoes look and sound awesome ... but the calories in one of those!!!! :-o

I have a similar recipe for the asparagus (roast the asparagus with parmesan shavings and then add the balsamic vinegar right before serving). DH says that it's like eating candy! ha!

That Creamy Berry Goodness sounds so yummy! I think I could eat the whole bowl myself! ha!

I don't cook but these wraps i could handle and they look delish, this would be good to take to work for lunch. glad i am not working but i would have used this back then.

I was never a fan of corned beef and cabbage so we didn' make any but yours looks loverly. Haven't had potatoes in a very long tme....

Those potatoes look wonderful! But I can't see me doing them; David's not a cheese fan. Maybe if I send my dad the recipe for the next time we visit... :)

I do see me making the lettuce wraps though! Those look really good!

Your low carb wrap idea is such a great one. You should try to grill your lettuce too. The charred and smoky taste in one bite and the fresh crisp taste in another is sooooo good.

I use organic romaine for wraps- the organic really does stay fresh way longer than the non-organic. I put chicken salad and egg salad in them with tomatoes and cheese. I love them too! Those potatoes look fantastic! Wish I was still eating carbs!

Oh my goodness those foods look so wonderful I am going to click away on pinterest and you. I love corn beef and cabbage.

You would be very proud of me - I made two sugar free cheeses cakes - they are cooking so I haven't tasted them.
