Easter Recap

As you know we celebrated Easter on Saturday. It was a wonderful celebration. Our immediate family is all the family we have in California and I love them so much. My son with his best girl, my daughter, son-in-law, Skye, Charlie and of course my husband. It was actually very nice having our dinner on Saturday because Sunday was a great day to rest and our children could go have dinner with the family of their significant others.

We had a wonderful time. We had time to visit, time to eat dinner, time for dessert, time to get silly with the Rice Krispies Treats lamb (warning: there is a picture of a sacrificed Rice Krispies Treats Lamb), and watched a movie! (Men Who Stare At Goats)

These pictures (which are missing silverware/glasses) are of my 38 year old china which I am still in love with. Also some dessert plates that I bought from Hallmark a few years ago that are perfect for Easter and my Ralph Lauren sale tablecloth that goes so well with the china.

I made these nest cookies that I saw over at the blog of my friend Alexis. I ended up using cream cheese frosting that I had to keep the coconut on the cookies. I also decided to try putting Rice Krispies Treats into the lamb cake mold that belonged to my aunt. It turned out cute if you ask me. (warning again about the next photo where my adult children went psycho on the lamb) There is also a picture of my yellow Peep lights.

So we celebrated a birthday with ice cream as requested. We had prime rib, sauteed mushrooms, green bean casserole, corn, deviled eggs, mashed potatoes, rolls & olives. We also had a spread of strawberries, blackberries, cashews, candy and the natural Cheetos which seem to be a family favorite. So after slicing up the lamb treats they started saying I should have made the inside of the lamb red like blood. So with the left over frosting and some food coloring a project started up to make the bloody lamb. Remember I warned you!
And why is it that I can't peel eggs. I needed 6 eggs for the recipe I was using so I made 8 and ended up with 4 that peeled well. I have tried every suggestion in the books and I still can't get them to peel well for me! Anyway it was a very nice weekend and I am thankful for all.

Get someone else to peel your eggs. That way, if they do a rotten job, you can blame them!

When I boil eggs (and I'm no expert), as soon as they're done I drain the water and bounce the eggs around in the sauce pan then peel under running water immediately before anything has a chance to get stuck. MOST of the time they peel perfectly, but not all the time. I think peeling eggs is an art!

Sounds like a wonderful Easter get-together! And what's really strange is you had basically the same treats we did at ours! I made the nest cookies that Alexis had made and my mom made a lamb (looks like it was probably the same mold)...from pound cake though and used cream cheese frosting with coconut in it to decorate it. And the whole think you children did with the lamb reminds me of my sister not wanting to eat the lambs head, because it had a face??? (She's silly!) Just thought it was all a neat coincidence! :-)

Beautiful table, and I love the bloody lamb!
Salt is the key to peeling eggs. Dump a lot of salt into the water with the eggs. The peel slides right off 9 times out of ten. Try it!

I Love all your wonderful Easter plates! I need to get some to make the day a tad more festive. Love all the wonderful goodies you had including your lamb treats! That is too funny. If I did that, no one would eat it and more for me.

I too, am still looking for the tips on how not to destroy the egg whites upon peeling them. Someone told me to use older eggs since they develop more air between the shell and the egg. Here's hoping your readers tip about just adding salt helps. I'll try that.

I'm terrible at eggs as well. So, I've moved on to other things and have gratefully allowed another family member to take over the eggs.

What an interesting idea with the lamb treats. I can feel my mind reeling as I type this about how I could possibly use that idea in many different ways. :)

Thinking about you out there in the land of fruits and nuts during the earthquake. Hope you are ok there.
In October 2002, we went to the Navajo Reservation for Feast of the Tabernacles, and my children
(10,12,14,16) actually saw a lamb slaughtered for the feast. We then ate native food with lamb which was not to our spicy Texas taste buds' liking, but it was interesting and bland, nonetheless. Surprisingly, the butchering didn't seem to bother any of them.
Did you use some of the 'blood' to cover your doorpost?

What seems to work pretty well for me is to put the eggs in a pot of cold water and then when it reaches a boil, take it off the heat and let it sit for about 15 minutes. When I'm ready to peel the eggs I roll them on the table so the shells crumble. I got to this through a fair amount of trial and error.

I finally found a way to hardboil eggs - I posted it on my blog awhile back -- Hard Boiled Eggs. The older the eggs the better, but the baking soda really works, even with new eggs.

I would have loved to be at that dinner just to hear the laughs going on! OK and taste the yummies, too!

Eggs that are too fresh are a nightmare to peel when hardboiled. The older the egg, the better it peels!
